Good point, if you like skin you can keep it- its optional. Skin is nutritional and gives fiber. For me taste is more mature with it, more full.I never remove the skins. why would I want to do that? It's like peeling mushrooms.
When the cooked chickpeas are blended, the skins get blended as well. I don't notice them.
You can use split chickpeas
Then there is no skin and they cook faster
