Yes that happens with me a lot of time, I eat the leftover or create a new recipe with the leftovers lolzz. Mostly for these small hunger I always keep puffed rice at home and made a crispy/spicy mix along with available raw veggies and lemon juice.

When we used to cycle tour and especially when we were (attempting to) cycling around the world, out used to happen so often that we kept hard boiled eggs right by the inner tent zip so when we did wake hungry in the night, we could have a hard boiled egg or two. Failing that it was nuts and dried fruit.
Now of I wake hungry during the night I just know I didn't get enough protein the day before and will make an extra special attempt three following day to make sure I get sufficient. But if it's really bad I'll raid the fridge or my snacks store and my go to snack at the moment are chilli and red pepper roasted fava beans. Not too many calories per packet and enough protein to take the edge off your hunger. Plus they are tasty.
