A very lazy recipe and alternative to a pizza
1 x flat bread (pita)
2 tsp tomato paste (but not the concentrated stuff)
1/2 tsp oregano
1/4 tsp ground kashmiri chili
2 cloves of garlic, chopped or thinly sliced
1/2 tomato, thinly sliced
1 tbsp capers or sliced olives
Cheese to your liking. I don't have much choice and use processed Gouda, but go wild, but don't overpower it.
i used my uuni for this as I don't have a decent oven.
For uuni or stove top, gently heat flat bread on one side to toast it a bit.
Not necessary when using the oven
On the untoasted side (in case of uuni) or toasted size (in case of skillet on stovetop)
Spread out tomato paste
Sprinkle with oregano and kashmiri chili
Top with garlic & capers or sliced olives
Cover with thinly sliced tomato, leaving some liquid behind
Top with cheese
Cook in skillet on stovetop, uuni or oven till cheese has melted
Note: it's much more difficult to write this than to actually do it
