Lockdown favourite meal

I make pantry pasta -- pasta and whatever I have in the pantry fridge or freezer at the moment. Last night, I made a sauce of canned diced tomatoes, garlic, fresh oregano and fresh basil. I served it with penne pasta, and a nice grating of ParmReg. Didn't have to go out to buy anything. I had all of it on hand.

George is so easy to feed. When I prepared dishes for the olive challenge I got "the look ". That did not last beyond the first bite . The only thing he does not care for is eggs for meals other than breakfast. I love eggs anytime.
We usually eat burgers without a bun, plated on lettuce and tomatoes, covered with melted cheese and topped with sauteed onions and mushrooms. One time I added a runny egg on top. G ate every bite and almost licked the plate .
After dinner he said "That was really good but eggs are for breakfast. "

I'm another one who's generally against breakfast foods for supper (or the other way round), but eggs transcend that, as does bacon.

Now, I probably wouldn't have a breakfast dish made with eggs for supper, but I'd still have eggs in some form. Omelette with hash browns and bacon, that's breakfast. Omelette with new potatoes and a little green salad, that's supper.

Ray eat anything, once he say to me "Bella if stay still on plate for more than 30 second it fair game"! My bambini very much same. One of biggest pleasure I have is see clean plates.

Eggs any time for me and almost any way unless they are overcooked (as in overcooked scramble or omelette or boiled egg). In fact, I think egg dishes feature high up in my lockdown meals. Luckily I've been able to obtain my favourite Black Farmer orange yolked eggs thus far. In fact, I'm planning Avgolemono sauce today with cauliflower.
 
My favorite lockdown meal must be Lasagne Bolognese. I doubted between Lasagna and Curry but Lasagna is made mostly of things I always have on hand and is a little easier to make, plus serves the whole family with little effort.

So I am talking slow cooked rich bolognese sauce with red wine, fresh lasagne sheets and homemade bechamel sauce with a good sprinkle of parmesan on top.

Yes Windigo ... Lasagne is an all time favourite even the kids order it when they visit.
 
Breakfast food is best at 2AM after the bars close. Waffle House if there is one around, but Denny's or IHOP will do in a pinch. :okay:

I don't like IHOP since the redesign several years ago. I liked the old A-frame buildings. Now, they just look like Denny's. :(

Back then, I had three go-to 2AM omelettes:

1. Chili Bean And Cheese
2. Spanish Omelette
3. Pizza Omelette
 
A local IHOP has now been transformed into VO AN a Vietnamese startup. They opened just before this mess started. The Pho was really good. I don't know if they can survive being new.
