Recipe Lockhart's Potato Salad

Now that is a potato salad that will get your attention. I've never used heat in a potato salad. Definitely a Texas thing. It looks terrific. I'll give it a try.

(*For those who might be wondering why an almost complete vegetarian would eat bacon, don't worry. Bacon is another food group)

Not sure, but it takes me several days to eat a batch by myself. It is three pounds of potatoes.

I bought a rack of Baby Back Ribs that I want to do, real soon! This salad would go nicely with it. I LOVE Potato Salad.

Just googled that. As an "additional vegetable", it's about half a cup, or 3.7 ounces. If it's the only side, then 6 ounces.

Just make sure to make the tater salad a day early. It's better after a night in the fridge.
