Recipe Maple Cajun Mahi Mahi

Sorry I didn't make a photo but the dish only took about 15 minutes to prep and cook and requires only 3 ingredients (if you use a commercial cajun seasoning.) This is about as easy as cooking can be with a restaurant quality flavor. I mixed my own cajun seasoning so I have written the recipe that way.

Ingredients - Cajun Seasoning
3 tsp paprika
2 tsp each, powdered garlic and salt
1 tsp each black pepper, oregano, thyme, cayenne pepper

Ingredients - Fish
4 portions frozen Mahi Mahi
maple syrup to drizzle

Instructions

Mix the seasoning ingredients without the maple syrup. Oil a skillet and place the fish to cook at medium heat. Drizzle the fish with maple syrup. Sprinkle the fish with the seasoning mix. flip the fish and repeat on the other side. Cook until it is done. What could be easier?

Sounds simple enough. Although, to me it seems odd to drizzle maple syrup on fish. Not a criticism, but sweet, syrupy type things are not something I associate with fish. Is the fish cooked from frozen?

It was 80 or 90% defrosted when it hit the pan. The majority of the flavor is from the Cajun spice mix. The sweetness of the maple syrup softens the heat of the cayenne pepper. It isn't a sweet dish. It just has a trace of sweetness in the mix, like you would experience with a little sugar in your cole slaw or tomato soup. It is just a light drizzle. It was really good. It tastes like it was a complex dish but it is about as simple as you will find. Wife approved as well.

I probably should have mentioned that you shouldn't use all the spice mix. just a sprinkle. This was a batch of the seasoning that I mixed up and I intend to use with maple syrup and mustard for the challenge. It will be going on chicken.
