Meat Free BBQ

I really love grilling eggplant, zucchini, peppers, onions, mushrooms and potatoes. I usually cut the veggies into large chunks or rings so they don't overcook on the grill too fast. Then I marinate them in a sauce made of olive oil, lemon juice, and various herbs and spices to taste. The marinade helps give the veggies extra flavor.

Gonna pass on those tips to my son, the BBQ King. He does T-bones, Tomahawks, picanhas, brisket - but hasn't got a clue about veggies because the only veggies he eats are French fries...
