Menudo - Mexican soup

It is! Typically in the southwest made from beef tripe, stomach, hominy, and an assortment of spices. I make the one with red chili powder opposed to the Blanco one with no chili powder.

Uhhh, no. When I was in high school I dated a boy who's father was from Mexico and his mother (not Hispanic) would make it. I didn't know what it was when they offered it to me. rascal and I have the same opinion on tripe...
 
Mexican menudo is very similar to what Barriehie posted , although there are probably even more chiles involved and possibly, a cow's foot, or some veggies, or beef marrow.
It's quite possible it originated from the Spanish, so "Callos a la Madrileña " (Madrid-style tripe) could have been the first version.
There are different variations in Latin America, although commonly it's called "Mondongo". No chiles involved in Venezuela and Colombia, but in PerĂº it's called patasca.
