Mushroom, Sundried Tomato and Garlic Crostini:
Ingredients:
1) Bread, baguette - 1/2 or 3 cross cut slices
NOTE: It is best to use a baguette bread loaf which may be split lengthwise or cross cut into a desired number of slices.
2) Mushrooms, crimini - 4 to 6
3) Sun dried tomato - 3 tblspns.
4) Garlic crushed - 3 tspns.
5) Ricotta cheese - 3 tspns.
6) Olive oil - as required
7) Cheddar cheese - 6 small slices
8) Basil - 2 tspns.
Procedure:

1) Cross slice the mushrooms, top to bottom.
2) Slice the bread, either split lengthwise or cross cut sliced.
NOTE: If the baguette is split lengthwise, cut the halves into approximately 4" to 5" pieces and use 3 to 4 pieces for listed ingredient amounts (adjust amounts to accommodate additional pieces).
3) Pan fry and toast in oil, the open side of the split pieces or one side of the slices.
4) Slice approximately 6 1" x 3" thin slices of cheddar cheese.
5) Mix the ricotta with minced garlic and basil.
6) Pre-heat the oven to 350F.

7) Spread the ricotta/garlic over the toasted side of each bread item.
8) Top with the cheddar cheese slices.
9) Top again, with sun dried tomato.
10) Arrange the mushroom slices on top of the cheese and tomato.
11) Bake for 15 to 20 minutes, until mushrooms cook and cheese melts.
12) Serve.
