When I saw these I thought of TastyReuben and his mashed potatoes hack with the instant package. I made my roux and stirred in a generous amount then added my stock and boom: hacked onion gravy.

I think you could probably do this with onion soup mix as well? That bag started out on the Walmart shelf...Have to say I LOVE that when folks look in their fridge/cupboard/closet and say:

Dehydrated potato flakes make a nice gluten free fish coating for pan fried fish.
Learned it from a friend in Florida who was a fishing boat captain. He and his wife ran out of breading and used the potato flakes but it was shallow pan frying, not deep frying. I don't believe they used any egg wash. I'm sure someone else out there has done this before as well.They do? I would have thought they went soggy. I must try it!
