I’m not au fait with instant mash. I’ve tried Idahoan mash (and didn’t mind it) but other than that I don’t know if we get flakes hereLearned it from a friend in Florida who was a fishing boat captain. He and his wife ran out of breading and used the potato flakes but it was shallow pan frying, not deep frying. I don't believe they used any egg wash. I'm sure someone else out there has done this before as well.
