Recipe Paniolo (That's Hawaiian For Cowboy) Chili

I would guess that mild Italian would be a better match. Chorizo has a seriously powerful flavor unique to itself. While perhaps not a similar substitute it might be a good choice as a different ingredient instead. That's the beauty of cooking. No rules, just good eating.
Maybe also luganega, a mild Italian sausage. And if we're going for mild, maybe ordinary American breakfast sausage. This recipe sounds so good that I 'm not going to give up for lack of one particularr kind of ingredient.

I'm a firm believer that recipes are not rules. They are guidlines or simply inspirations. Any cook that uses a recipe should make the recipe suit personal preferences. I like her recipe as well.

For me, I grew up eating Portuguese Sausage aka Linguica

Portuguese Sausage Eggs And Rice ... us "locals" aka folks from Hawaii say it as if it were one word
Shoots, even McDonald's serves up the same meal, as well as just about any breakfast joint in Hawaii.
Linguica has a very unique flavor, I don't know if it's the Paprika, the vinegar, the spice blend, I don't know, but now that I posted the above photo, that's what's for breakfast tomorrow 👩‍🍳 along with a big glass of POG aka Passion-orange-guava juice - be still my heart!
