Never enough pickles, bologna, or pickled bologna in this house!
Ingredients
All in the pot and bring to a boil.
Once boiling remove from heat and let cool a bit before jarring.
Best after a several days in the fridge. Awesome with a cold beer on a hot day!
Ingredients
- 10 oz bologna, I used enough links to not have a partial link left in the package.
- 1 Tbsp brown sugar
- 1 Tbsp sea salt
- 1 star anise
- 1/2 tsp ground coriander
- 1/2 tsp ground mustard
- 1 tsp whole peppercorns, I used white but whatever you've got should work.
- Pinch of annatto powder, for color *optional*
- 1/4 chopped onion
- 1/8 chopped roasted bell pepper, whatever color you like.
- 2 chili's, I used Thai green
- 1 smashed garlic clove
- 1 cup of water
- 1 cup of white vinegar
