Recipe Pickled Bologna

Never enough pickles, bologna, or pickled bologna in this house! šŸ˜‹

Ingredients
  • 10 oz bologna, I used enough links to not have a partial link left in the package.
  • 1 Tbsp brown sugar
  • 1 Tbsp sea salt
  • 1 star anise
  • 1/2 tsp ground coriander
  • 1/2 tsp ground mustard
  • 1 tsp whole peppercorns, I used white but whatever you've got should work.
  • Pinch of annatto powder, for color *optional*
  • 1/4 chopped onion
  • 1/8 chopped roasted bell pepper, whatever color you like.
  • 2 chili's, I used Thai green
  • 1 smashed garlic clove
  • 1 cup of water
  • 1 cup of white vinegar

All in the pot and bring to a boil.

Once boiling remove from heat and let cool a bit before jarring.

Best after a several days in the fridge. Awesome with a cold beer on a hot day! šŸ˜‹

I didnā€™t have roasted peppers or fresh onion. I used red onion I had pickled a few days ago. I chose Serrano, because itā€™s one of my favorites. And, I like using a tea bell because it keeps all the spices together without making a mess. This is a Koegelā€˜s brand ring bologna.

I didnā€™t give it nearly enough time before I tried a piece. This was after only a few minutes, and it had already picked up some of the flavor of the brine. Balogna, like sardines, is something I did not respect properly before. But, if you pair the bologna with the right seasoning, youā€™ve got a party.

Bologna parties are good! I like a spice mess when I shake it and mix it all around. šŸ‘
