Recipe Pork Trotters in the IP, from frozen

I typically use my IP as a pressure cooker so here's a go with slow cooked, overnight, trotters from frozen.

Ingredients:
  • Split trotter half cut into thirds
  • 1/2 onion, diced
  • 2 celery stalks, diced
  • Garlic cloves to taste
  • Several bay leaves
  • Chipotle powder
  • 1 heaping Tbsp bouillon
  • 1/2 bell pepper, chopped, seeds and pith discarded
  • Butter, lard, or oil to sauté
  • Boiling water to just cover
Cooks Note: I’ve a three qt. IP so if yours is larger you'll need to adjust qantities.

Method:
Dice or chop as desired and sauté the onion, celery, and bell pepper in the IP on Sauté setting until the onion is translucent. Set the IP to slow cook low and the time for eight hours thirty minutes. Place the trotter pieces in skin side down. Add all remaining and pour in the boiling water to come to the top of the trotters.

Put the lid on and walk away!

I can get split trotters but find that these, then cut in thirds, cook more evenly and faster plus they fit in my small IP.
