Prunes in Red Wine
Serves 4-6

Ingredients
1 pound large pitted prunes
2 cups fruity red wine (I used Merlot)
1/3 cup honey
8 strips lemon peel (from one lemon, use a vegetable peeler)
Juice of 1 lemon (about 1/4 cup)
24 walnut halves
4-6 small slices of pound cake
Port, for serving (optional)
1/2 cup sour cream
Fresh mint sprigs, for garnish

Directions
Put the prunes, wine, honey, lemon peel and juice, and walnuts in a medium saucepan set over medium-high heat.

Bring to a strong simmer, then cut the heat back to medium-low, just enough to keep a gentle simmer going, cover it, and simmer for 20 minutes, then remove from the heat and allow to cool to room temperature.

When it’s time to serve, place a slice of the cake in a coupe or dessert dish, then spoon in several prunes and walnuts, and add enough of the wine sauce to soak the cake. Sprinkle with a few dashes of port, if using, then top with some sour cream and a sprig of mint. Serve.
