THIS guy has served me well. The little thickness guide rings have come in a lot more handy than I ever imagined. Great to throw in the freezer for a bit too when working with a lot of butter, like making croissants.

I can see absolutely that a metal pin would be brilliant for croissants and puff pastry. In fact I may get one...
