Recipe & Video Seared Scallops With Ginger, Garlic Butter and Finger Limes

Ingredients

12 fresh sea scallops
6 cloves grated garlic
1 knob ginger, cut in to straws
2 finger limes
1 tbsp oil
1 large knob butter

Method
Heat oil in a frypan, then sear scallops briefly each side to colour...then set aside.
Drain oil out of frypan, then melt butter in the same pan.
Add garlic and ginger and gently fry for a minute or two.
Add scallops back to butter to reheat, stirring and coating in same.
Serve scallops on a plate, spooning over garlic/ginger butter.
Cut finger limes in half, and squeeze over each individual scallop.
Serve with crusty bread to soak up excess butter.

Simple delicious but with for me an amazing twist. When I looked at your stills I thought you had used fish eggs as a rather for me superfluous garnish. Finger Limes I had never heard of them. What a thought provoking ingredient.I like to make ceviche here in the summer. The search for finger limes is now on. Bravo Creekers.
 
Not easy to source in the UK but I have used them. They are very pretty and often referred to as finger lime caviar. See here:

They.re a really special ingredient I think, especially paired with seafood. I'm not going to bombard the seafood recipe contest with more posts using them, but here's a masala fish fry video that was a spectacular success in my opinion.

Wow, that looks good. Just managed to order some finger limes. Ocado stock them.
 
A decent substitute for finger limes is yellow seaweed pearls (vegan roe) mixed with lime zest.

They sounds even more difficult to source. :laugh: Will search...

Cavi-art vegan seaweed pearls/roe are available in several colors (and flavours) here. I couldn't find finger limes for sale (and I won't order them from Australia).
 
In my misguided efforts to grow citrus here, I ordered a finger lime citrus tree / shrub. I managed to get a total of TWO finger limes from it the first year. The second year it bore no fruit, and it died the third year. (It was small enough that I'd bring it indoors each winter).

So, anyhow, this is how I ate those two, scallops as well:

Essentially, I had enough of those little finger lime nodules to use on three scallops!

I'm fascinated by these "finger limes" - just watched the video, loved it - I've never heard of them...so now have to try and find some in the UK.

I've found them on Ocado (sometimes). I've also ordered them from specialist on-line suppliers (Thai, I think). I'll check...

OK... it wasn't a Thai on-line shop (I was thinking of kefir lime leaves). I think I got them from Riverford.
