In Spain in the early 70s one of my staple meals was bocadillo de tortilla.

My Father would make breakfast after Church of the same breakfast sandwiches, served with sliced Apples and a juice of some kind ... I haven't had that in years, maybe tomorrow ... Mayo & American-style Scrambled Eggs are very good friends.

Hmmm, so I wonder where my Father got the notion to make it? He was born and raised on Oahu, but then, he was in the Marine Corp, maybe he picked it up that way? I can't recall him ever going to Ohio.

Leftover Buttermilk Waffles from that double batch that I made to share with Mom.
I re-heated them in the toaster and add some Chicken Garlic & Herb Sausage on the side... very yummy!
