My Weber is round so I put coals to either side with the drip pan in the center. I light the coals at one end by dropping lit coals from a chimney. For each pile of coals, I start at opposite ends. I don't light all the coals at the same time. The lit coals light the unlit coals next to them. It is basically a controlled burn throughout the cook.
 
If you put coals over the whole bottom of the grill, you can't put a pan with potatoes to roast in the dripping fat directly below the meat.

Yeah I normally just serve with sides of salads etc, the meat is the star!! Still a bit cold to fire it up again??
