Ingredients: (Serves 4-6)
400 gms diced, tinned tomatoes or 400 gms passata
1 tbsp tomato paste
5-6 sundried tomatoes in oil, roughly chopped
3-4 tbsps balsamic vinegar
1 onion, sliced
3 cloves garlic, minced
8-10 basil leaves, chopped fine
olive oil
Salt & pepper
Method:

Method:
- Heat some olive oil in a pan and, when hot, add the onion. Cook until barely soft, and then add the garlic. Fry for a minute or two until the garlic loses its raw flavour.
- Now you can do one of two things: (1) put all the ingredients into a blender, and blend until smooth or (2) add the rest of the ingredients to the pan.
- If you choose the first, then return the contents of the blender to the pan and simmer. If you choose the second, then just bring to a simmer.
- Cook the sauce for about 15-20 minutes on medium-low heat. Taste for seasoning: you should taste the acidity of the tomatoes & balsamic, and the sweetness of the onion & sundried tomatoes. If too acidic, add a tsp of sugar. If too sweet, add another dash of balsamic
- Serve with pasta, chicken, croquettes, etc.
