Xni-Pec Salsa

Since we frequently have to get creative (i.e. cheat) to get past the letter X, here's one we can use. The link I provided is to @CraigC's excellent habanero-heavy recipe. It's a Mexican recipe, but Craig is in Florida, so...
 
Z'herbes gumbo.

I got out 4 of my southern cookbooks. There isn't an X dish in 1 of them so the salsa it is.

The only Y dishes are yams of some sort and the only true southern dish for Z in any of them is the gumbo.
