I know nothing about Vietnamese cuisine, so this is like watching an episode of Star Trek, with references to delightful names of dishes I can only imagine.

Well I for one, look up Vietnamese food lists or whatever. Its a way of learning about new food - not a test of how much I know.

That would have been the first thing that came to mind. As it turns out, there are many, many, many Vietnamese dishes that start with "banh" (which translates literally to "ball" in English).

Unfortunately, there are not so many Vietnamese dishes that start with U. But, I did find this gorgeous picture of an Uni Banh Mi (at Hanoi House, in New York City):
