The CookingBites recipe challenge: cabbage/kale/Brussels sprouts

I don't like kale. To me, it tastes much too strong & tangy. That is why I use baby spinach leaves in place of it in smoothies. :whistling:
 
I've had a big think and the obvious things approaching Easter have all been very recently done (eggs, chocolate, chicken) and rabbit doesn't really appeal to me to be brutally honest, nor is it that easily available worldwide despite what my lawn tells me right now!

So something that will work for everyone I think, myself included with my dairy allergy, is yoghurt. The only requirement is that it is plain yoghurt. It can be any plain plant based yoghurt (soy, coconut, oat, almond, cashew to name a few) or any plain dairy yoghurt (sheep, goats or cows being the most common). What you do with it from there is entirely up to you.

To take Easter into account, I'll make the deadline Wednesday 20th April (midnight 23:59 GMT+1) which is a little over 3 weeks away. That should clear Easter for everyone in all timezones, I think.

Is there anyone who can't consume yoghurt (plant based or dairy)? Windigo ?

It's also tax time, April 18th is the deadline here in the states, and since I am self-employed, I will be busy with getting that taken care of and working, of course. I will probably just sit this one out but I will be paying attention to what everyone else comes up with!

I'm fine with yoghurt, I actually eat it almost every day.

my heart was beating faster and stronger, not just last night and this morning in the early hours, when I was reviewing all my notes and reflecting on all your recipes, and picking out winning recipes, but I am sure it will beat stronger every time I recreate on of your fantastic recipes. We have had 32 amazing recipes and I will certainly be trying many of them. For sure, the recipes were inspiring for all members who followed the challenge. Thank you so so much for your efforts, time and investment you put into this challenge. Congratulations to everyone!

I strongly decided for Colcannon, beacuse it is mastery in simplicity, flexibility and execution, as well as tradition.
