The CookingBites recipe challenge: coriander

Here's another one. I had this for dinner last night, so there's none left.
There's a beautiful harmony about this dish. The smooth sweetness of the coconut milk, the sweet prawns, the aromatic mixture of spices and the "heat"from the chile and black pepper, the citric notes of the coriander leaf and the slight crunch of the black mustard seeds.
It is recommended to use small prawns for this dish, although the sauce works well with bigger ones, and with fish. If you want to make it even hotter (and slightly more citric), go ahead and add some fresh green Thai chiles.
The slightly curious thing about this recipe is the use of two "masalas" ie. spice mixes. The first, mustard and fenugreek, are tempered to begin with. The second mix is not tempered at all; just added to the coconut milk.
You could probably make this dish vegetarian, or vegan, by eliminating the prawns and just adding vegetables. Carrots, green beans, even red bell peppers would make for a colourful dish. View attachment 126280View attachment 126281

Here comes my last entry: Potato & yoghurt curry. This dish has a handful of coriander leaf !
The recipe comes from Tamil Nadu, south eastern India. One of the notable things about south Indian food is the use of split peas/lentils/dhal as a condiment. In this case, the Indian chickpea known as chana dal. Here, it's just soaked; in other recipes I've seen the dhal toasted and then ground.
The second unusual aspect of this recipe is NO onions and NO garlic. Strict hindus reject both onions and garlic,. since they're supposed to "excite", so here's a perfect example. the flavour of the spices, the coriander, the ginger and the fresh green chiles is quite enough.
For the spice paste, I used coconut milk rather than water, simply because I had some left over from another recipe.

Almost all entries have made it on my "to cook" list :)
As soon as I can get fresh coriander...

New Mexico style chicken and green chile stew

To my surprise no Thai green curry :)

I liked all recipes, so I choose the one I totally not expected
It was the use of coriander (seed & leaves) in liquid food
So based on originality the winner of this challenge is TastyReuben with Cilantro- coriander gin and seltzer
