Mussels with Fennel and Scotch Bonnet

Bacon, Fennel, and Gouda Frittata.

Bacon will always get the top billing, but the fennel is clearly the star. Those are fennel seeds and thyme sprinkled on top, and there are chopped fennel bulb, leaks, mushrooms, and asparagus inside along with the bacon and Gouda.

@The Late Night Gourmet - did you post the recipe for this? Its not coming up under the Challenge tag and I can't find it. Deadline is midday Wednesday (UK time). So there is still time to post it - but that is probably 7am deadline in the morning for you or something.
 
All the entries look wonderful!:D Thanks for participating!:okay: As always, I look for the dishes that best represent the ingredient as the standout. There were three that I feel did this the best.

Karen knows I had a unfair advantage of being able to taste her entry.

It was a very hard decision, but I had to go with Fennel au Gratin. So congratulations @MypinchofItaly, you're the winner!:bravo:

Its over to you to choose the next ingredient and act as judge. To see what has been chosen before see here: The CookingBites Recipe Challenge: List of previous winners and ingredients. It doesn't matter if you choose something which has gone before as long as it wasn't too recent.

Just post your choice of ingredient here and I will do the rest. We normally have a 3 week deadline but its flexible depending on you. That would make it midday 30th August. Let me know if that's OK.
