The CookingBites recipe challenge: pickle

First of all, I must say that I am incredibly impressed with the response to this challenge. When I chose pickles for the challenge ingredient, I worried that it would be too specific and would limit entries too much. I was proven wrong. You’ve all shown so much creativity, with recipes ranging from cucumber pickles, to chutneys, pickled vegetables, eggs, fruit, and even pickled meats. We’ve also seen pickles in salad, fish dishes, sandwiches, and with meat. We had a total of 22 entries by my count, which is phenomenal. Congratulations to everyone!

I will sleep on it tonight and choose a winner tomorrow.
 
This has been an extremely difficult challenge to judge, with an abundance of delicious-looking recipes to pick from.

The winner is The Late Night Gourmet, with his Blueberry havarti panini with blueberry shrub cocktail!

I love the creativity of pickling blueberries (something I’d never thought to try), and I love how it makes both a main dish and a beverage in one fell swoop!

Wow...thank you, Herbaceous. As I mentioned when I posted it, that was when the light went back on for my love of cooking. As far as I was concerned, that was enough of a win, but this makes it even sweeter (with a hint of vinegar). :laugh:

I will need a little time to pick a new ingredient, but I expect to figure that out by tomorrow.
 
After having checked the previous ingredients, and finding that every one I thought of had been done several times, I found one that has never been chosen:
