I would love to try making this. Alas, the chances of me acquiring pork brains in the next three weeks are rather minimal. (I have had pork heads in my freezer, but none are there at the moment.) I know if I drive down to Amish Country in Pennsylvania I can get some of these, but that's a 5 or so hour drive just the one way.Pork brains with apple remoulade???
