Loaded Bacon & Cheddar Potatoes
Admittedly, this is finger food. It probably doesn't belong in the Recipe Challenge post because of it's sheer simplicity. On the other hand, no discussion of potatoes would be complete without at least one loaded potato recipe.

I just love stuffed jacket potatoes!

German Potato Salad, with Capers
I made this for a pot luck I attended - actually about a week PRIOR to the topic for this current challenge. The main difference from other German potato salads is that this has capers in it. Also by necessity, it ended up being served cold - 2 hours to get there, and food wasn't served out for another two hours - but I did heat up the few leftovers when I ate those.
