Roasted Sweet Potatoes with Pecan Satay Sauce. I know that the sauce is more brown than you would expect from a satay. But, I couldn’t find red peppers that I liked, and the pecans appear to be darker than peanuts that would normally be used. But, the flavor is incredible.
I had an idea for a braised chicken thigh and sweet potato dish bouncing around my head yesterday. I had everything I needed, but couldn't seem to get that idea out of my head, and into a pan.
