Thanks.I would suggest you to change the 00 Flour for a Durum Wheat Semolina Flour. 00 Flour is usually an over-processed flour and it gives only a soft texture rather than an authentic flavour. Semolina Flour is quite better and it is the flour they use in Napoli.

They probably are using only mozzarella but there are many types so it would help to know what sort is floating your boat, asking might be helpful to your mission.My local Italian probably only uses mozzarella?

Yes Ocado stock Caputo flours including that one.Caputo Semola di Grano Duro rimacinata is the best. I don’t know where you can find it in the UK, maybe Morrison’s or Ocado

Yes M&S quality is generally (though not always) good. You might be able to get what you want at your local M&S but it if its a small foodhall the range would be limited so maybe not. Waitrose is also the other supermarket that stocks goodies for foodies.

Like a lot of supermarkets they don't cater for the higher end ingredients. Morrisons do great meat, great fish and good basics but you also won't find quite a few cooking ingredients stocked there.
I had assumed that as you paid A LOT for your tomatoes before and seemed to be on a mission that paying a bit more for your pizza ingredients was on the cards. It helps to check the reviews for a product on somewhere like Ocado and see if another supermarket sells it. That way you have the knowledge but can pay a lower price.

Long term I want to be able to cook on own pizza to save money instead of eating at the Italian restaurant.
I see this for sale near me, but don't know if it's good vs the flour brand one. This one says it goes up to 300c. The flour one goes up to 500c I think.

Also, Morning Glory lives in Maidstone, Kent, and she gets delivery. Might be a good option for you? I've no idea if it's costly, but seems like it would be worth not pedaling a bunch of miles to get your groceries.Which one? I've tried the best tesco have to offer, including the Galbani one that you can get in every supermarket. I never buy already cut. I buy the fresh stuff. And it's utterly crap. No flavour at all. Even the tesco finest.
I've never made a real authentic pizza yet. But I have bought mozzarella for pasta I make and bought the dop tomatoes I wrote about above for making pasta too.

Anyway, that ottimo looks very much like one of the uuni/ooni's.
Lots of them on the market now.
I've never used the ottimo, but I am very happy with my uuni. Mine was for wood pellet, but I changed the burner to gas.
These things do have a learning curve. You gotta pay attention and turn the pizza often. Its done within 2 minutes.
Don't use high hydration dough.
Ooni/uuni has a recipe site and those ar dedicated to machines like this.
Almost any flour will work.
