It is indeed a variation of aloo matar. This one has onions and garlic in it, but has lemon instead of [the "modern" addition of] tomatoes. It is very light in spite of the potatoes, and quite fragrant.Would that be "aloo matar"?

Garnished with toasted slivered almonds.

It makes them stay more uniform in shape. It is a method for out door grilling. They simmer in their own juices for about 45 minutes which keeps the dark meat very moist and tender, then I take them out and finish them with a barbecue sauce and to dry and crisp them up a bit. Cut the knuckle(hip joint) off and you only have one small straight bone inside so it is convenient to eat.I've never come across that before. So - what does using the muffin tin do? Is it just to make them muffin shaped?
