What did you cook or eat today (April 2025)?

Meatloaf rivals pizza as my favorite food.
Your ma must have made it rights!

I had pizza for breakfast before work.

I stopped after work tonight and picked up a steak to bring home for me and DH to share. I had points at TGIF to use so it was free. It's weird they've closed all Ohio locations but this one up by Cleveland. Dinner at 11:30ish.
 
Picnic lunch out. Weirdly we thought the day sad just comfortable guys the temperature was about 16°C. The car informed us that it was 26°C in the shade. You can always tell autumn is coming when 79F feels cool. 😆

I bought a lot of Belgian cheese croquettes so I can savor one a week for the foreseeable future ( I bought 24) . But of course to celebrate the return home I had two. With roast potatoes and a chicory, apple & beetroot salad.
Husband had poached salmon, he doesn't care much for these croquettes.

I never could bring myself to love it. My mother's meatloaf traumatized me, lol.
Agreed - I don’t like meatloaf, never have. The whole idea of a loaf made a meat is somewhat unappealing to me.

My parents make one that uses ground chicken with apples as a filler and I can choke that one down, but I still prefer not to. They made it for us a while ago, forgetting that I’m not a meatloaf fan!

I use roasted ground chicory root in with my coffee is that what's used with the potatoes or is it the above ground part? Looks like the top parts?

Edit: Nm, I found a bunch of recipes online and they were all with the above ground part. 👍

Yeah it's the leaf ☺️ we call it witlof ( white leaf)

Yeah, I am not a fan of fruit with meat though, so it would be a nope!

I do like lamb and beef with seasonings for gyro meat quite a bit and I love meatballs made with lamb, pork, and beef...I think my ma put ketchup over the meatloaf and used too much bread crumbs or something. Also it was made with all beef and it wasn't lean beef, so there was this pool of grease around it...I just never got over it. :geek:
 
if one takes a slice of meatloaf, trims it into a round, it's essentially a "hamburger" . . . .

around here, "meatloaf sandwichi" is the frequent fate of 'left over meatloaf'
