What did you cook or eat today (April 2025)?

Stripped the chicken off the last two breasts we had on hand, shredded that, looked in the fridge and found a lonely half o’ bell pepper, half an onion, and two errant pieces of cheese, so I cooked the onion and pepper together with some garlic and herbs de Provence, melted in the cheese, toasted a couple of the leftover dinner rolls and…POOF!…chicken sandwiches.
 
Smoked some ribs with pecan wood and baked some bread.
Simple pleasures.

Did you roast it in the oven? I'm thinkin Arby's....

It was way better than Arbys!

I made a salt, pepper, garlic, paprika, and thyme dry rub. Cooked it on a raised rack in the oven at 500 degrees for 15 minutes. I lowered the temp to 275 and cooked it until the center temp read 125. I let it rest on the counter for 30 minutes. Wrapped it in foil and let it rest in the refrigerator for 3 hours. Then we sliced it up.

To heat it up, I used the juice from the roast, red wine vinegar, and beef stock (with some additional seasonings). I heated this to a boil and pour it over the meat. It worked perfectly. I hosted a 13 player poker game. Everyone raved about the roast been sandwiches!
 
That's my favorite roast beef roast dinner.

Arby's isn't "Roast” beef. It's more like pressed and formed meat. Roy Rogers was real roast beef. Can't find many if any Roy Rogers anymore. I really liked those beef and cheese sandwiches with real au jus gravy added.
 
I managed to cook last night which was a miracle in itself. I was late, hubby was later and evening meal...

And then half way through the window guy turned up to finish off fitting the flyscreen meshes to the new windows.

I'll need to thin the sauce a bit for tonight, but it tasted great.
