Have a bit of prep cooking to do today so asked Mr SSOAP to pick up something for lunch.
He didn’t deliberately go full orange on it but if he had he would have won 😆

Breaded chicken, garlic sweet potatoes and carrot and swede mash.
I told him they were fine choices as everyone knows orange food can only be surpassed by beige 😆

I always forget what swede is in American, and have to look it up... rutabaga. I'm going to forget that.

Wife decided to invite 15 of her old school friends for (early) dinner on Thursday. We've also been working on fixing the garden. All of a sudden, the ***T hits the fan and she's gone into Energiser Bunny mode. "gotta do this, and that, gotta fix this, that and the other, gotta, gotta, gotta..." :hyper: :hyper: :hyper: :hyper: :hyper: :hyper: :hyper:
Me? I tend to do one thing at a time. Too many years in Corporate to try and resolve all the problems at once, because I know that never happens.
Zipped off early, bought all the veg, the Basmati, the herbs and the chicken for Thursday; the only thing missing is the shrimp, which will arrive (on a motorbike) tomorrow. Made some ghee, did some confit tomatoes with Indian spices, made 15 portions of Gulab Jamun, made some cheesy shortbreads, cut up the cauliflower for pakoras, set out the spices for the other dishes... tomorrow will be a breeze compared to today.

Blimey! I'm very impressed.

Smoker still works, even in 0 degree weather. My smoker tray had a literal inch thick layer of ice.

I need to buy some blocks of cheese to cold smoke while we are having these cold nights.

I don't use my smoker for that. I use an A-Maze-N Smoke Tube in my Weber Kettle.

Mild white cheeses work best, IMO. I like Gouda and Swiss/Emmental. I don't care for it on sharp cheeses like aged cheddar -- there is a fight between the cheese and smoke for flavor dominance.

Lunch was pretty much the same as yesterday's bowl of fruit but with a little more in it.

So I added nectarines to the mix for today (watermelon, plum, nectarines, apricots, kiwi fruit and passionfruit served with homemade soy yoghurt).

This evening, less exciting. It was a bowl of carrot & red lentil soup. We've another 2-3 weeks of eating from the freezer yet...

Smoke some fresh mozzarella too if you do. It's great on a pizza with spinach sauteed with some garlic and a pinch of red pepper flakes, plus sautéed criminis. There's a pasta dish we make too that's super good but I can't remember the name right now.
 
‘Beyond Meat’ burger for lunch.
With the only pre-made salad I’ve ever bought and really enjoyed- Marks and Spencer ‘Supergreen salad’.
And some shop bought steamed plain beetroot that there was something not right with because it tasted sharp, I ate it anyway 😂

I liked the way the ‘Beyond Burger’ cooked in the pan. Including the beetroot colouring coming out.
They were enjoyed, Mr SSOAP didn’t realise they were vegan burgers until I told him but then he does like his spicy mayo and have more burger toppings than actual burger.
I’d definitely have them again.
They are quite soft even when thoroughly cooked.

Satay sauce for tomorrow’s rice paper rolls (summer rolls) and some spare for the freezer. Will get to try out my new borosilicate bottles in the freezer 👏
