They had Boudin balls with mustard, but we were stuffing our faces enough as it was.

I'd imagine it's also moist (and the char on it looks so good that I'd happily dive into it right now if I could, even though I just finished lunch!)I left substantially more fat on the loin than I normally do and found it surprisingly tasty.
