What did you cook or eat today (March 2024)?

I spent most of today in the hospital emergency room. On the way home we stopped at Arby's for sandwiches. I had a gyro and my wife had the breaded chicken sandwich. Two sandwiches and two soft drinks - $18. The sandwiches were OK but not worth the price.

I have had their gyros before and like a lot of chains, some locations do it better than others. Mine were comped by the company I was working for at the time so no out of pocket expense...but that does seem rather pricey. I think these days often it's the drinks that are the biggest cost. I tend to stick with water, but I honestly like water better than soft drinks overall (unless you put rum in my Coke).
 
So last night it was already 6pm and I was wondering what to eat while peeling 1 kg of garlic for some Indian Garlic Pickle. Time passed...
Chopped up some cherry tomatoes, a clove of garlic, some fresh bocconcini (mini mozarella), some olives and some basil leaves, added olive oil and left it to marinate. About 8pm, I cooked up some rigatoni, then added the (raw) sauce to the pan once the rigatoni was cooked. MypinchofItaly will correct me if I'm wrong, but I think the technique is called "stracciata"( something like pulled, or stretched?).

That looks like a whole pile of cheese, but actually it was very little, grated with the microplane.

I don't know yet. The abdominal pain results from diverticulosis which is a fairly minor issue. The more important finding of the CT scan was some evidence that my colon cancer may be working on a comeback. I was cured of it 2 years ago with surgery and chemotherapy. It was at stage 3 so was curable.

I need to get in touch with the oncologist and, probably, get a new PET scan. We will see. If a comeback is in the works it will have been discovered very early (stage 1) so it shouldn't require surgery. That's important because I have already lost the right side of the colon. I'm not interested in losing the left side. I'll let you know after I meet with the oncologist.
 
I had a nice morning tea by myself with 4 choc afghan biscuits my granddaughter made yesterday. So I picked her up from school at 3 and dtopped her at her hair appointment as her parents both busy with work. She made these and knew I liked them. Next week they are making anzac biscuits another fave..she keeping me some.
My cooking journey started at high school also at same age.
She then asked me for my sausage rolls recipe..I txt her..she is make sometime.
Those biscuits were so sweet.

Tonight was a "what's in the fridge that needs using up?" night.

So, an aubergine was airfried, snowpeas were steamed, as was some Swiss chard from the veg plot, and the homemade pesto was thinned with garlic olive oil and added to a helping of vegan (shop bought) ravioli.
