Nothing wrong with using a good curry paste - and in the UK we have some excellent ones.
Nice! Did you notice I also used scallop shells recently? There is something delightfully retro about cooking in scallop shells.

Our fishmonger yesterday, selling scallop shells at 25p each. Unfortunately, he'd sold out of scallops, which is what we went for.
Speaking of food from the sea. I made this sarnie today.

This is a meal we serve at our cafe that I have been missing since being in quarantine. It is called a "Kimcheese"
The bread is freshly baked sourdough, with homemade Kimchi and melted cheese, shredded carrots, cilantro and seeds. It is absolutly delicious!
