We've been eating out or take-out, or really simple meals for the most part for the past couple of weeks.
I did make chicken mimosa sandwiches with butter and lard biscuits, with sweet potato butter and sriracha slaw from either ATK or Cook's Country. They were also supposed to have either a poached or over easy egg on them, but we skipped that. Pretty good, especially the crust on the chicken.
Mom's sandwiches, corned beef, ham and turkey with 1000 island dressing as a spread, dill pickle slices, thin slice tomatoes and munster cheese, dipped in an egg/milk wash, fried in butter and vege oil, finished in oven.
Plus we had a sheet pan b/s chicken, potato cubes, green beans in a garlic, butter, thyme, chix broth meal that was definitely worth a mention, though I'd parcook or put the green beans in a bit earlier since they were quite crunchy still. There is mention of several other sheet pan meals on the site I'm going to try.
