I use a blend of sea salt and pink salt to cure meats.
This is where I buy mine. Franco is an old mate, its one of the biggest sausage and curing site in the UK. saltpeterI'm guessing that is why it is not used these days for curing meats.

Last Night Potato pizza with kulen and cheese for me, without cheese for Mrs Blank. Make dough saute pots with onion. Shape base, cover base with slices of large ripe tomato, then the potato, then cheese and kulen. Dot with Kalamata olives, sprinkle with oregano.View attachment 45854

That mate is a thing of beauty. Family size no no no.... I would scoff the lot. I make Rendangs on occasion and I love making pies. I can smell and taste it Bravo.Beef rendang pie....family size.

That was also the rumor when I was in basic training, along with getting a shot with a square needle in your one of your testicles sometime during your last week.I was referring to the (myth) usage of salt peter, which was also once used on the foods of adolescent boys and cheating husbands to keep their "peters" out of commision.
