What did you cook or eat today (September 2021)?

I made my family's favorite for lunch -- shrimp in a diced tomato and onion sauce seasoned with garlic, basil and black pepper. Once again, I didn't think to take a picture. Every time I go to Houston they want me to make it.

My sister and I went for fajitas and a margarita for dinner after spending a day with my parents that had both on the edge of sanity. :hyper: My sister asked if it was okay for my liver for me to have a drink, and I said, "Not really, but at least my head won't explode."

I was expecting this question, but from someone on another continent.

King Ranch chicken is named after the King Ranch, the world's largest ranch -- in Texas, of course. It is a spicy casserole with chicken and corn tortillas. I've never made it. Here is a recipe from Southern Living Magazine...

A version of picadillo. Ground beef and pork(that is how it is sold, that is why it keeps popping up, very good meat mixture. Large 850 g block pack. Have no clue why not 500 g or 1000 g. Does not matter. We eat it usually over 3 days😎).

Coriander, cinammon, raisins over onion, celery, plentiful carrots, salt, pepper.

I really like the warm soft sweet aromas, kid was not thrilled when serving, but eventually was happy with it.

Leftover rice. Very nice lunch.

I remember the first time I grilled tuna steaks in my twenties. It was for me and my girlfriend at the time. We ate a few bites... then went to a restaurant for dinner. Overcooked tuna could be classified as a weapon.

But it's salvageable. You can add mayo and liquid smoke with chopped green onion and make a dip for crackers. Or noodles and cream of mushroom soup for tuna casserole.
