today was just a quick 'Indian' veg mix to go on our oatcakes (Staffordshire oatcakes - similar to pancakes only made with oatmeal & yeast rather than wheat flour & egg). The 'Indian' was literally just 2 chopped onions cooked in asafoetida, yellow mustard seeds, cumin seeds, ground cumin, ground coriander, turmeric, chilli powder, sweet noble paprika, garam masala and tamarind with a tin of chopped tomatoes added and finished off with some fresh chopped coriander. When I took it to my parent's they said it smelt so good that they had it with their oatcakes as well. I would have added some potatoes to the mix, but I didn't any otherwise that works well with the mix as well.
