What do you cook for friends??

We regularly have friends over for dinner. I cook usually 3 courses and then.we play cards. Always a good night.
This Saturday we are having 4 close friends over a d I offered wayne the choice of 3 meals. Fish fillet mignon steak or curry night.
Wayne txt me this morning . Curry night it is.
Popadoms
Meat and also vege samosas
Onion bhajees
Butter chicken.
With all the condiments.
Ice cream and coulis

We don't have folks over aka entertain, much but when we did ...
We had a friend who chose to be Vegan, okay, so what do I serve?
I had to use that ever present "Giggle" and came up with this dish ...

Cauliflower crust mini quiches ... I can't remember what else I served, but you can see the Corn on the Cob fresh from the farm a coupla lots up from us. Mind you now, this was prior to Riced Cauliflower and the like - I had to prep it all myself and coming from an Omnivore, who by the way dislikes Cauliflower, it was dang good!

That was Easter Brunch 2017 - there was some Meat & Cheeses of us folks who were into more than veggies.
 
I usually cook Indian food as well.
Last week was:
Papadums
Vadas ( like falafel, but made with split peas) and tamarind chutney
Minced chicken kababs with kachumbar ( finely diced tomates, cucumber, red onion, coriander leaf, lemon juice and a couple of green chiles. Pico de gallo, but not for wimps :laugh:)
Mattar paneer ( peas with paneer cheese)
Pigeon peas with cabbage and tomato
Basmati pullao (cook the rice with turmeric, they fry up a few raisins, sliced almonds, a stick of cinnamon and a cardamom or two, mix together, add loads of ghee).
Mango chutney (home made).
 
I usually cook Indian food as well.

I wish we all lived a little closer so we could have a big dinner party. Would there be too many cooks in the kitchen? Yes, probably. It would be fun and chaotic, but we'd need a really, really big kitchen!
CB’s cooking camp out, with rooms and decent beds and en-suite bathrooms for those of use who require facilities, what’s that? Everyone then 😂
I imagine the wine would get opened and after the discussion on how to peel a potato entered it’s second hour we’d end up having to order takeaway 😁

If it was held in the UK I would maybe be able to attend, the US would not be possible due to my blood clotting condition. It's a lovely idea though! 🩷
 
When friends are over I usually bake or make sweets,

Last year I made these apple & banana beignets for New Year's, and a Key Lime pie when a friend came over.

I also often make Gado gado, an Indonesian vegetarian dish that's easy to serve to lots of people

Or I bake lasagna, of course. It's a labor of love!

My rules for serving multiple people are:
- It has to be very moorish
- It's preferably easy to prepare and easy to make a lot of
- I can prepare parts of it the day before
- It can easily be upgraded to serve it for even more people (like adding an extra egg to Gado Gado , or Garlic bread to lasagne)
 
If it was held in the UK I would maybe be able to attend, the US would not be possible due to my blood clotting condition. It's a lovely idea though!
I'd rather meet across the pond or almost anywhere other than the US given our current political state of affairs. Italy in particular might be nice though.
