I'd rather meet across the pond or almost anywhere other than the US given our current political state of affairs. Italy in particular might be nice though.

Yes, I agree that is one of my thoughts too but I didn't want to derail the topic too much. I'm very worried. Italy is lovely and would be even better!

My rules for serving multiple people are:
- It has to be very moorish
- It's preferably easy to prepare and easy to make a lot of
- I can prepare parts of it the day before
- It can easily be upgraded to serve it for even more people (like adding an extra egg to Gado Gado , or Garlic bread to lasagne)

Very sound advice, and the more you can prep the day before, the better.
