OK - a re-cap:

Its a vegetable.
Its (obviously) white.
Its not coleslaw, jicama, onion, horseradish, daikon or rutabaga (swede in the UK).
Two members used it in recipes recently.
Its prepared here in a 'classic' way.
Well I am a chef but I am stumped for any classic dish that looks like this and does not contain the above. Sure I'll be like 'oh of course!' then when it's revealed. But I can't think of anything.

I only cooked classic French food in cooking school, but definitely not this.
And I've never worked in classic French restaurants either.
Celeriac is almost always only used for purees here

This is quite a well known dish in the UK. Well, not an everyday dish but one known to keen cooks I suppose. More popular back in the days of Elizabeth David, perhaps (who made French recipes accessible to the middle classes here).

Thank you that's interesting to know. It's something I have never seen before around here. Sounds nice anyway
