Looks like dragonfruit to me.
 
I've seen this, is it the Thai fruit that stinks, name escapes me ATM.
Galangal?

Neither of those - the stinking one is Duran, I think.

This plant is used in Thai cooking (flower, stem, seed pod) but the root part isn't so much. The root is used much more in Chinese cooking.
 
It doesn't look to me like mara but it could be a type of melon?

When you cut them open they look like this (@The Late Night Gourmet used some in a dish recently).

But personally, I've not seen the root used.
