You can also soften the crust by spraying the loaf with water a couple of times or so while it is baking. For the crumb, the others have given you some good guidance.

Thanks! I'm going to try that recipe as soon as I can get to town for the ingredients. We live in the country on a lake quite a ways from grocery stores. I'll let you know.
I made this recipe tonight. I doubled it. I wanted at least three large loaves, cuz I wanted Mr. Glen to have one. He's loved my bread so far, but I got four. We got to town, but we forgot to buy honey, so I used maple syrup. I don't mind making bread for Mr. Glen, my man's 88 yo neighbor, and then the other neighbors...Well, one of them has a sister dying, so I made them a loaf too. So much for my $35 per loaf sales record. I saw that blades recommended water spritzing to keep the crust soft while baking as well, after I baked the loaves. I opted for melted butter, and I buttered the whole body of the loaves, and they are buttery-soft crusted (I hope they liked their massage). I tell you what! It appears to me that this bread recipe is gonna make for some purdy dang good sammich stuffin' holders!
