Why aren't these knives widely used?

My desires? I want a blade which food won't stick to it like crazy, that has a thin blade and that is light. I'm sure you don't HAVE to spend over £100 to get that...
I tried an unusual and much different approach to this problem (LOL) and I Googled "thin blade lightweight kitchen knife" and much to my surprise, multiple inexpensive options populated on Amazon. Maybe you should do the same and then read the reviews for the ones that fit your budget.
