fried
Southern fried chicken, also known simply as fried chicken, is a dish consisting of chicken pieces which have been coated in a seasoned batter and pan-fried, deep fried, or pressure fried. The breading adds a crisp coating or crust to the exterior of the chicken while retaining juices in the meat. Broiler chickens are most commonly used.
The first dish known to have been deep fried was fritters, which were popular in the European Middle Ages. However, it was the Scottish who were the first Europeans to deep fry their chicken in fat (though without seasoning). Meanwhile, a number of West African peoples had traditions of seasoned fried chicken (though battering and cooking the chicken in palm oil). Scottish frying techniques and West African seasoning techniques were combined by enslaved Africans and African-Americans in the American South.
This is a variation of classic Lebanese fried kibbeh, which are torpedo-shaped shells of minced beef and cracked wheat, stuffed with a mixture of meat, onions and spices. The process is a little fussy, so I decided to make it a bit easier and avoid the stuffing.
My torpedoes are dreadful; I...

This morning I took a half pork tenderloin out of the freezer not knowing what I would do with it. As I like to do I went through the fridge and pantry looking for an inspiration. I decided to make a fusion pork fried rice. The rice and sauce are certainly Asian but the rest of the...

This is a simple dish that can be used in a number of ways. I chose to use mine in BLTs (bacon, lettuce, tomato sandwich) in lieu of using ripe tomato slices and they were great like this, but these can be enjoyed on their own as an appetizer with a yummy dipping sauce like this one: Recipe -...
