roast

Roasting is a cooking method that uses dry heat where hot air envelops the food, cooking it evenly on all sides with temperatures of at least 150 °C (300 °F) from an open flame, oven, or other heat source. Roasting can enhance flavor through caramelization and Maillard browning on the surface of the food. Roasting uses indirect, diffused heat (as in an oven), and is suitable for slower cooking of meat in a larger, whole piece.Meats and most root and bulb vegetables can be roasted. Any piece of meat, especially red meat, that has been cooked in this fashion is called a roast. Meats and vegetables prepared in this way are described as "roasted", e.g., roasted chicken or roasted squash.

Has anyone ever smoked a rump or other beef roast like a smoked brisket?

We buy beef by the quarter or sixth cow, and we did not get a brisket this time. I researched this and it seems doable, but I wondered if I'm the only one. I can honestly say I have never once thought about smoking a roast until now. I would not want to let the juices drip into the fire/coals.

    Recipe Mississippi roast beef

Tried out this interesting recipe for beef with mayo the other night. It was very tender, but not as flavorful as I’d have liked. We’ve been making sandwiches with the leftovers this week. Recipe adapted from Tasty.co. Ingredients: 1 boneless beef roast, 3 lbs (I used round roast) 3 tbsp...

5 lb Chuck Roast recipe used for 2 lb roast.

I wonder... How would the final dish taste if one was to use a full recipe for a 5 lb chuck roast and only used a 2 lb roast? Would the meat risk overseasoning? Would the liquid lose the influence of the meat too much? Would the ‘extra’ sauce/gravy/liquid (and some carrot/onion remains) be...

    Crockpot Pot Roast Question

This is strange...Have been looking on-line for a recipe. I have found that half the recipes call for the meat on the bottom and the veggies on top. The other half calls for the veggies on the bottom and the meat on top. So for half the recipes, the meat will cook in a cooking liquid for 8...

Recipe Chilean seabass with tarragon alla vodka sauce

Chilean seabass is a delicious, white meat, firm-fleshed fish. The flesh is quite attractive when fileted, but it's not an attractive fish when whole and unbutchered! In fact, it's not really a seabass at all, that's just the name it is marketed under. The actual name is Patagonian Toothfish...

Probably an impossible question but which is preferred ? I’d...
